From the part of the cow which brings you the T-bone steak, here comes JPM's own version of the strip loin steak.

Strip loin is the meat coming from the cow’s short loin, which is a much bigger chunk of muscle actually comprising the tenderloin muscle. Being located also at the back of the cow, this part is also barely used, making the meat produced in this area a good substitute for the tenderloin.

The strip loin's edge from the tenderloin is its overall muscle size. Because of this, this part produces more varied cuts that can make your next dish more festive.
