JPM's rib eye roll is a particularly a larger block of meat which has been cut from the muscles in the rib section of the cow. The meat for this particular JPM cut is from the meat produced from ribs number six to twelve. Because this is the muscle that comprise the chest and surrounds the respiratory system of the cow, the muscle in this part can be considered slightly used. But that does not mean that the JPM rib eye rolls are not tender at all. The rib eye roll is soft in its own way and also boasts of being the most flavorful of all the cow meats. This is due to the fact that this kind of beef cut is also the most marbled of all.
